Det beh\u00f6ver inte (eller ska inte!) vara dyra fancy restauranger s\u00e5 d\u00e4r. Men det ska vara lokal matkultur och det ska vara gott! Innan avresa t\u00e4nkte jag mig den marockanska maten som ganska lik den i Mellan\u00f6stern. Taginen st\u00e4lls p\u00e5 grillen och inneh\u00e5llet kokar l\u00e5ngsamt. L\u00e5ngkok, m\u00f6rt k\u00f6tt och mustiga smaker. Lite som den vulkankokta maten vi provat p\u00e5 n\u00e5gra st\u00e4llen i v\u00e4rlden, nu senast p\u00e5 <a href=\"https:\/\/4000mil.se\/index.php\/milos-stallet-att-aka-till-manen\/\">Milos<\/a>. Fuskcouscous. Mikromat, typ. F\u00e5r jag l\u00e4ra mig att det \u00e4r. Riktig couscous tar tid och k\u00e4rlek i anspr\u00e5k. Ska sk\u00f6ljas, r\u00f6ras och \u00e5ngkokas i tre omg\u00e5ngar. \u00c4ts g\u00e4rna p\u00e5 fredagen d\u00e5 familjen samlas. Det \u00e4r l\u00e4tt att g\u00f6ra mycket, s\u00e5 att det r\u00e4cker \u00e5t alla. F\u00f6rr\u00e4tten \u00e4r ofta en eller flera sallader. F\u00e4rsk sallad med gurka, tomat, paprika och n\u00e5gon \u00f6rtkrydda. Eller en mer matig och kryddstark sallad av t.ex. kokta och fr\u00e4sta auberginer, tomat etc.<\/p>\n<p>P\u00e5 en buff\u00e9 hittar jag en sk\u00e5l med en r\u00f6d r\u00f6ra. &#8221;Ketchup?&#8221; undrar jag, men m\u00e5ste \u00e4nd\u00e5 prova. Det visar sig vara en r\u00f6ra av l\u00f6k som kokats s\u00f6t och blandats med tomat, kanel och andra kryddor. V\u00e4l rengjorda citroner l\u00e4ggs in i olivolja, havssalt, kanelst\u00e4nger och lagerblad. En soppa som jag sj\u00e4lv brukar laga hemma i Sverige ocks\u00e5, fast d\u00e5 i vegetarisk tappning. Massor av pressad citron \u00f6ver innan servering ska det vara!<\/p>\n<p>Grillspett \u00e4r ocks\u00e5 en vanlig r\u00e4tt.<\/p>\n<h2>Frukost<\/h2>\n<p>Marockanska pannkakor, msemen eller br\u00f6d, khobz med lite honung, eller kanske bara olja. Buff\u00e9n p\u00e5 restaurangen Taj Mahal (nej inte indisk mat utan marockansk!) p\u00e5 hotellet Atlantic Palace gav en mycket trevlig \u00f6verblick \u00f6ver det marockanska k\u00f6ket. Vi \u00e5t \u00e4ven v\u00e4lsmakande tagine p\u00e5 restaurangen <a href=\"https:\/\/www.tripadvisor.se\/Restaurant_Review-g293731-d12851360-Reviews-O_comptoir-Agadir_Souss_Massa_Draa_Region.html\" target=\"_blank\" rel=\"noopener noreferrer\">O\u00b4Comptoir<\/a> i Agadris nybyggda marina och p\u00e5\u00a0<a href=\"https:\/\/www.tripadvisor.se\/Restaurant_Review-g1183132-d3158705-Reviews-Jnane_Soussia-Taroudant_Souss_Massa_Draa_Region.html\" target=\"_blank\" rel=\"noopener noreferrer\">Jnane Soussia<\/a> i\u00a0 staden Taroudant.<\/p>\n<p>F\u00f6r den som vill botanisera ytterligare i den marockanska k\u00f6ket, rekommenderas boken <em><strong>I k\u00f6ket med Markiz: marockansk magi<\/strong><\/em> av Markiz Talhaoui<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/track.adtraction.com\/t\/t?a=1064669490&amp;as=1140773301&amp;t=1&amp;tk=1&amp;i=1\" width=\"1\" height=\"1\" border=\"0\" \/>.
